THE SCIENCE BEHIND THE MAGIC As the water boiled, it produced steam. The steam forced air out through the top of the can, replacing most of the air that had filled the can before. The steam-filled can was closed before the steam could condense. As the steam condensed, the pressure inside the can decreased because liquid water takes up less space than steam. Meanwhile, the pressure of the air pushing on the outside of the can remained unchanged. Because the pressure on the outside of the can became much greater than the pressure on the inside, the can collapsed.

What remained on the paper were the clearly visible blue crystals of anhydrous (without water) cobalt chloride (CoCl2). With time, the blue crystals will react with moisture in the air and re-form pink hydrated crystals. Sodium chloride (NaCl), which is ordinary table salt, is not an organic compound (it has no carbon). Consequently, heating dried salt would not produce a visible message. However, when you rub the soft graphite pencil over the letters you have written in saltwater, the graphite adheres to the paper but not to the NaCl.
